Ya’ll – I’ve been eating like crap lately. Andy and I have both been burning the candle at both ends. We always cook at home if we are here together. I can’t remember the last time we cooked! I have been craving veggies, so last night, since we were both home together for the first time in a while, and not too exhausted to cook (I’m just saying, Las Palmas has received a lot of our business lately), we had veggie night. We needed the pick-me-up, because eating like crap makes you super cranky and tired. Well, it does for me anyway.
I wanted to share this simple idea because we grill everything as long as it isn’t raining. We have had a grill bowl for the past couple of years. And everything goes into it that can’t go on the grill grates. My favorite thing to use it for are Brussel Sprouts.
Grilled Brussel Sprouts
- Cut the base and cut in half; pull off the top leaves if they don’t look good
- toss in EVOO with salt and pepper
- throw in the grill bowl and grill over medium heat for about 15 minutes (depends on your grill)
- When done (the centers should be cooked through), toss back in a mixing bowl with put a little more EVOO on them and toss with grated parmesan cheese
If you are feeling frisky, fry up a couple of pieces of bacon, reserve the bacon fat from the pan, and chop up the bacon. Toss the brussels in the bacon fat and bacon pieces – divine – but not healthy.
We also love to use our favorite spice mix, Bad Byron’s Butt Rub on them instead of salt and pepper. This stuff, even though it has a funny name, is great on everything – fish, red meat, veggies, potatoes!
